What Are the Various Types of Coconut Oil Processes?
Major commercial operations use high heat and mechanical
grinders to get every drop out of the copra. The copra comes in dirty,
because the nut is chopped and burned by the farmer to separate the meat
from the nut. The resulting meat contains charcoal ash, which
discolors the product. The extracted oil then waits until a large
container has been filled up, which usually means it stands for several
days or weeks in the open air and tropical sun!
This form of oil is called RBD (Refined, Bleached, and
Deodorized), because the producer must process the coconut oil to take
away the discoloration and make it look and smell neutral. RBD oil is
the cheapest and most widely used coconut oil. The RBD form of coconut
oil looks slightly gray or cloudy, with hardly any coconut fragrance or
taste. It is still better food than rancid unsaturated oils, but many
of its natural properties have been damaged.
A more healthful extraction process is called "Refined."
While the process for refined coconut oil does use heat, it starts with
fresher coconuts. This method results in higher levels of the
healthful Medium-Chain Triglycerides (MCTs), often sought after by informed
